Mid-Wis Maple, Day 14
Too damn cold and nasty to do any woods work, the sap's not running anyway.
We finished cooking the box elder sap—we'd left the fire burning the previous evening, and it was down pretty far...
...lit some more wood under it until there was so little left in the pan we were afraid it would burn...
...so transferred it to a pot and finished on the kitchen stove.
Next we strained it through some muslin, then a felt bag,
...and poured it into a couple of pint bottles,
...with an ounce or so left to sample. 10 gallons (?) of sap for this little syrup?
Xavier didn't like how much his bespoke stove had leaked, so he took another run at closing up the seams and ground them flat. We'll see, next time.
