Mid-Wis Maple, Day 28
Gathered again, almost like the old days: lots of sap, trees running well, good rolling boil in the pan. Too bad it didn't happen two weeks ago.
This time of year the frost isn't all the way out of the ground, and the wet muck stays on top, unable to drain...
...makes for sloppy work.
We finished cooking the box elder syrup, and the end result was more than a gallon from this batch. Had some on pancakes this morning—it has a different flavor from regular maple, not bad.
This deer head stares at me every time I walk back to the shed.
